Bihari Style Chicken Curry is a traditional dish from the state of Bihar in India. Flash fried chicken cooked in a spicy gravy with whole garlic knobs, try this easy recipe that is absolutely lip-smacking.
Cooking Instructions
- 1
To begin, place the curry-cut chicken in a large bowl. Marinate it with salt, Kashmiri red chili powder, turmeric powder, and lemon juice. Mix well and keep aside.
- 2
Heat mustard oil in a karahi to a smoking point and let it cool a bit. Flash fry the chicken pieces in batches on high heat until they colorize. Remove and keep aside.
- 3
In the same oil, add bay leaves and whole red chilies. Next, add in the whole garam masala and allow it to crackle. Now add in the sliced onions and saute until translucent.
- 4
Add in the chopped ginger and garlic, and the whole garlic knobs. Saute until the onions begin to change color. Do not brown.
- 5
Reduce the heat. Add in the dry masalas - salt, Kashmiri red chili powder, turmeric powder, cumin powder, and coriander powder. Mix well. Add some water so that the masalas do not burn.
- 6
Cover with a lid and cook for a few minutes until the oil starts appearing on the sides.
- 7
Now add in the fried chicken pieces. Mix until well-coated. Add water, cover with a lid, and let it simmer on low heat for 10-15 minutes until the chicken pieces are cooked.
- 8
Finish with garam masala powder and mix well. Check the salt and add more if required. Adjust the gravy as per your taste.
- 9
The Bihari Style Chicken Curry is ready to serve. Enjoy with litti or boiled rice.

MURGH MAKHANI / BUTTER CHICKEN CURRY MURGH MAKHANI / BUTTER CHICKEN CURRY
Super delicious restaurant style butter chicken anyone can make at home. This dish is based on the British Indian Restaurant style.NOTES:If you're missing any spices don't worry. substitute for something similar if you can and if not that's ok too! the closer you can get to this recipe the better. This is a very indulgent meal, if you want to cut down the amount of butter... don't. Eat something else. Cutting back on the butter will ruin the dish as it is the heart of the dish.If you like more spice add 1 or 2 chopped green chilli to the onion as you are sauteing and blend together into the onion paste. You can use tandoori masala paste but i find these too sweet and much prefer the powdered form. you can buy from Indian grocer or on ebay etc.Cream will make the dish more or less rich. feel free to adjust this ingredient as you please.Ideally you want the chicken to be ready to add to the gravy as it comes out of the oven. I place chicken in the oven as i begin to saute whole spices. The timing is up to you but don't worry if it doesn't match up perfectly. You're better off having the gravy ready early as you can just continue to add water if it thickens too much. If the chicken is ready far too early i would advise continue cooking on a low heat (70 degrees celcius) until cooked through completely. BABYCAT THE CURRY QUEEN -

People make all sorts of curries. Some add coconut milk, some add cream & others vary the spices. When the chicken is half cooked, you can taste the gravy & add salt or spices according to your wish. If you want a less spicy curry reduce the quantity of the powders used. You can even add coconut milk. Curries never taste the same. Let's try this one for a change. Pen Friend -
Chicken Kadhi, not "Curry" Chicken Kadhi, not "Curry"
Primarily prepared with curd and gram flour, kadhi is an Indian delicacy that changes and adapts to different states of India, with each having it's own take on it. Be it the tantalising kadhi pakoda from Punjab, Kokum infused sidhi kadhi or the medley of sweet and spicy in Gujarati kadhi. The simplicity of this dish is unparalleled.Just like a lot of states in India have their own take on it, I, too, decided to give the traditional kadhi my owl little twist. The meat-less dish got adorned with meat in my kitchen and the outcome turned out to be so good, that I’the happily replace it with the regular kadhi that we generally prepare.Give a break to your typical chicken curry, and try chicken kadhi, instead!
