Ingredients

  1. 1full curry cut chicken (about 800gms)
  2. 3/4 cupmustard oil
  3. As RequiredWhole garam masala
  4. 4whole red chillies
  5. 3 medium onions finely sliced
  6. 1 piece of ginger finely chopped
  7. 10 clovesgarlic finely chopped
  8. 3-4whole garlic knobs
  9. 1 tspsalt
  10. 1 tspKashmiri red chilli powder
  11. 2 tbspcoriander powder
  12. 2 tbspcumin powder
  13. 1/2 tspturmeric powder
  14. 1 tspgaram masala powder
  15. For the marinade
  16. 1 tspsalt
  17. 1/2 tspturmeric powder
  18. 1 tspKashmiri red chilli powder
  19. As requiredJuice of one lemon
  20. As requiredWhole garam masala
  21. 2bay leaves
  22. 6cloves
  23. 10peppercorns
  24. 1 piece of cinnamon
  25. 1black cardamom
  26. 5green cardamoms
  27. 1star anise
  28. 1 piecemace
  29. 1 tspcumin seeds

Cooking Instructions

    To begin, place the curry-cut chicken in a large bowl. Marinate it with salt, Kashmiri red chili powder, turmeric powder, and lemon juice. Mix well and keep aside.

    Heat mustard oil in a karahi to a smoking point and let it cool a bit. Flash fry the chicken pieces in batches on high heat until they colorize. Remove and keep aside.

    In the same oil, add bay leaves and whole red chilies. Next, add in the whole garam masala and allow it to crackle. Now add in the sliced onions and saute until translucent.

    Add in the chopped ginger and garlic, and the whole garlic knobs. Saute until the onions begin to change color. Do not brown.

    Reduce the heat. Add in the dry masalas - salt, Kashmiri red chili powder, turmeric powder, cumin powder, and coriander powder. Mix well. Add some water so that the masalas do not burn.

    Cover with a lid and cook for a few minutes until the oil starts appearing on the sides.

    Now add in the fried chicken pieces. Mix until well-coated. Add water, cover with a lid, and let it simmer on low heat for 10-15 minutes until the chicken pieces are cooked.

    Finish with garam masala powder and mix well. Check the salt and add more if required. Adjust the gravy as per your taste.

    The Bihari Style Chicken Curry is ready to serve. Enjoy with litti or boiled rice.
