Crispy Beetroot Popsicles is an excellent to serve for party starter.
Cooking Instructions

Assemble ingredients

In moderately heated pan add oil, add ginger + green chilli and sauté for few seconds, then add carrot + beetroot + green chilli and sauté for 3-4 minutes by covering.

Add salt + garam masala + turmeric and sauté further for few minutes more by sprinkling water till veggies turn soft.

Veggies is cooked and allow to cool. Discard green chilli.

Mash potato, add cooked veggies + corn flour + salt (as required) to mashed potato and mix very well.
Popsicle mixture is ready. Give shape of round balls and give a gentle press, insert ice cream stick and popsicle is ready. - 6
Mix corn flour + salt + water and prepare a medium slurry.

Dip each Popsicle into slurry and coat with bread crumbs all over and refrigerate for 10 - 15 minutes.

Shallow fry till golden brown and crisp from all sides.

Beetroot Popsicles is done. Sprinkle rock salt and serve hot and crispy.
