Mutton Pasinde

A popular side dish from the City of Nawabs that is made with boneless Mutton, Curd, and spices. Basically it is done without a pressure cooker for a more authentic taste and flavour. But as it is time consuming, it can be made in a pressure cooker as per one's convenience just as i did. Slow cooking is the secret behind this amazing side dish from the city that goes well with Naans and even Baghara Khana. Anyhow pressure cooking it does not make it less flavourful and aromatic by any means. But i used Lamb bone-in this time and have also used just a few Almonds and Poppy Seeds for this creamy dish.
Basically the masala paste is made up of roasted Dry Coconut, Peanuts, Poppy Seeds, Charoli Seeds, Almonds and Cashewnuts. But it's not a must everytime. I use one or two of these ingredients mentioned or sometimes even 3 or more. But in this particular dish that iam sharing it today has only two ingredients from the list as mentioned for the masala paste.
Try this delicious gravy with spices and Curd along with the selected Dry Fruits that render it a royal touch and a class unsurpassed.
Eid ul Adha Mubarak!

Cooking Instructions
- 1
Wash and clean the mutton at first. Add in ginger garlic paste, red chilli powder, garam masala salt and turmeric to it. Mix well and keep it aside for an hour. This minimum marination is quite important.
- 2
Meanwhile grind roasted poppy seeds, almonds and fried onions to a smooth paste. Add this to the beaten curd and mix well.
- 3
Heat oil in a pressure cooker and add the marinated mutton to it. Pressure cook for 6 whistles or as required. After the pressure settles down, open the lid and add the masala paste to it along with the slit green chillies.
- 4
Mix well and saute until the raw smell disappears completely. Do it on a low heat. Add hot water as required to adjust the consistency as per one's liking. Also adjust salt at this point.
- 5
Simmer until done. I did not add any water to it as the onions and curd both add to the water content in this gravy. Garnish with freshly chopped coriander leaves. Also sprinkle a little of garam masala on top as well.
- 6
Serve hot with naans, bagara chawal, plain rice, vegetable pulao etc. And relish it with any simple salad of your choice. Enjoy!

Mutton Haleem Mutton Haleem
#Post14 - This is a very popular Hyderabadi dish during the holy month of Ramadan. It can be prepared with either mutton or chicken. But now a days, you come across vegetarian haleem too. Traditionally it is slow cooked for many hours on an open flame. But I tried the simplest method - Pressure cooking method. It is quite a rich dish with loads of dry fruits and ghee, but it is equally nutritious as it contains various types of lentils and oats (traditionally wheat is used). This delicacy is served with a dash of lime, fried onions, chopped coriander-mint leaves and dry fruits. #goldenapron Bethica Das -
Shahi Mutton Kasundi Shahi Mutton Kasundi
#post21 - This is a real shahi dish where mutton is cooked in a creamy mustard gravy. It goes well with pulao, jeera rice, plain Biryani, tandoori roti, naan or any Indian bread. In this recipe, I have added kasundi (bottled Bengali mustard sauce) and almond paste to make the consistency more rich and creamy. So you have an easy and a yummy mutton curry to relish. In case of non-availability of kasundi, you can use some homemade ground mustard paste. So go ahead and try this delectable dish and relish with any form of rice preparation or Indian bread. I marinated the mutton with yoghurt, ginger-garlic paste, and other dry spices before continuing with my cooking process. The end result was simply awesome with a hint of mustard flavour and the creaminess coming from the ground paste of almonds. It is a great party recipe for special occasions. #goldenapron Bethica Das -

Kheema Matar (Mutton Mince With Green Peas) Kheema Matar (Mutton Mince With Green Peas)
#reststyleKheema Matar is an absolutely delicious dish especially when teamed with some paav (buns)! Mutton kheema/mince made from goat meat is used to prepare this dish. In India, Kheema Paav is a very famous dish and can be found on the menus of almost all restaurants serving non veg food.Mutton surely takes a longer time to cook, but curds when added to the same helps in hastening the cooking process. Again, it lends a delicious flavour to the dish. Instead of cooking the kheema in a pressure cooker, cooking it directly in the kadhai is always better to get a delicious flavour. The end result is simply just awesome! Pooja M. Pandit -

Mangshor Korma (Bengali Mutton Curry) Mangshor Korma (Bengali Mutton Curry)
#reststyle - This is a traditional Bengali style Mutton Korma / curry, where I have used large chunks of potatoes, as it is well known, Bengalis love them in each and every dish. And to think of preparing a mutton curry without it, is not easily digestible. Mangsho /Mutton is a very popular sunday menu in almost all Bengali bones and is equally relished in all Bengali restaurants too. Here in this particular version of mine, I added some roasted fresh coconut and fried onion along with the usual ingredients to make the dish more rich and aromat. It is relished either with plain steamed rice, poori or chapati. There is no ham in trying it out with jeera rice, khushka, naan, tandoori roti or any Indian bread. There are obviously many versions to this dish, where yoghurt or poppy seeds are also added according to individual preference. Bethica Das -
