Ingredients

  1. 3 cupsWhite Bread Flour
  2. 1/2 cuprolled oats
  3. 2 tbspsunflower or pumpkin seeds or a mix of both
  4. 2 tbspbutter
  5. 1 tspsalt
  6. 1/4 th cup honey
  7. 2 tspinstant yeast
  8. 1 cuplukewarm milk
  9. 1/4 th cup warm water
  10. Topping:
  11. 1 tbsprolled oats
  12. 1 tbsppumpkin and sunflower seeds

Cooking Instructions

    In a wide bowl,whisk together the flour, oats, yeast, pumpkin and sunflower seeds, oats and salt.Add water and milk in a microwave safe bowl.Heat up for 1 minute. Stir in honey and butter into the water/milk mixture.Add this gradually to the dry ingredients and whisk.Do not over mix.

    Cover with a plastic wrap and let it stand at room temperature for 2 hours or until double the size.After the dough has risen, place it on a well-floured surface.Sprinkle some flour and fold the dough 5-6 times.Flip and fold again.The dough will be very sticky.Shape the dough into a loaf shape.Grease a non-stick loaf pan and place the dough in it.Mix topping ingredients and sprinkle on top of dough.Lightly press them and allow the dough to rest for 30 minutes. Pre-heat oven to 350°F.

    Place a baking pan with 4-5 cups boiling water into the pan to get a crispier crust.The steam trapped in the shut oven helps the bread to get a crispy outer crust while moist inside.Bake for 45 minutes or until the crust is golden brown.Insert a skewer to check whether it is baked properly inside.

    Remove the bread from oven and allow to cool for at least 20 minutes before slicing and serving.Serve this soft, fluffy Oatmeal Bread with a crispy golden crust as a toast with any soups of choice or can be used as sandwich bread and relish.
