Mutton Stew with Mixed Vegetables

This is a traditional Bengali Mutton Stew with Mixed Vegetables such as carrots, beans,papaya, green peas and potatoes. It is a colourful and healthy recipe from Bengali cuisine. This tri colour mutton stew tastes delicious and has a prominent place on an Indian dining table,specially during any occasion. The spices in this recipe are minimal making it a healthy meal for kids and older family members. Mutton Stew pairs very well with hot steamed rice in lunch or with some crusty bread or roti for supper on a cold winter evening.

Cooking Instructions

Wash mutton and marinate with ginger garlic paste, 1/2 tsp salt and vinegar for 1/2 hour. Peel potatoes and cut into cubes. Set aside. Peel papaya and carrots. Cut them into cubes.Slice onions.Cut beans into 2 inch strips.Heat ghee in a pressure cooker.Sprinkle half crushed green cardamoms and black peppercorns.When they sizzle, add bay leaf.

Add chopped onion and saute till translucent.Add tomato and saute.Now add the marinated mutton and cook for 5 minutes. Add 2 cups water, salt to taste and pressure cook upto 4 whistles.Open lid after 5 minutes. Add all the chopped vegetables, tomato puree, salt and sugar to taste and pressure cook upto 2 whistles. Open pressure cooker after pressure releases completely.

Now add the green peas.Make a slurry of wheat flour and add it to the boiling stew.Mix well to avoid lumps.Sprinkle black pepper powder, garam masala powder and 1 tsp ghee.

Mix and serve hot with rice, roti or bread and savour the flavours of a bowl of healthy and hot Mutton Stew with Mixed Vegetables and Potatoes for lunch or dinner on a cold winter evening.
