This is my wife's recipe for a very popular stew from the Philippines. I modified it to participate in the #DelantalDekookpad2025 challenge—this is my version.

This is my wife's recipe for a very popular stew from the Philippines. I modified it to participate in the #DelantalDekookpad2025 challenge—this is my version.

In a large skillet, heat 1 tablespoon of oil and cook the sausage for 10 minutes. Remove the sausage and set aside.

In the same skillet, add 1 tablespoon of oil and sauté the onion and garlic for 5 minutes. Add the ginger, shrimp bouillon cubes, and 1 cup (240 ml) of water. Cook over medium heat for 20 minutes. Add the green tomatoes and cook for another 5 minutes.

Add the squash and cook for 5 minutes.

Add the okra, eggplant, bitter melon, green beans, and the remaining 1 cup (240 ml) of water.

Season with ground black pepper and return the sausage to the skillet. Cover and cook for 5 minutes.

Add the spinach, cover, and cook for 5 minutes. Stir, cover again, and cook for another 5 minutes.

Once everything is cooked, serve with white rice and your choice of meat—chicken, fish, pork, beef, or enjoy it on its own. Garnish with avocado slices. Enjoy!
