Fava Beans Stew

Fava Beans also known as the Broad Beans are a popular ingredient in Mediterranean cuisine. I have already shared Ful Medames or the mashed Fava Beans dish popular in the Arab Peninsula on this wonderful platform.
Today iam sharing a simple Stew made in Indian style with some commonly used powdered spices. The best part is that it gets done pretty much quickly as it is a canned variety that iam using here. And that is why it is very much important to remember that use of Salt should be minimal.
As a fresh Vegetable this adds a hearty taste to Minestrone and Herbed Dips. These Beans are bright Green in colour with creamy Yellow pods. As they get older, the Beans get much darker Green including the pods. The pods are used in Stews and Vegetable Salads. These can be added to your favourite recipes or can be just tossed in some Olive Oil and used in Salads and Soups or even in Dips.

Cooking Instructions

In a cooking pot, heat oil. To this add chopped garlic and onion. Saute this on a low to medium high heat. Drain and wash the beans with water. Keep aside until use. Once the onion gets slightly brown, add the chopped tomatoes. Cook until soft and mushy.

Next is to add the fava beans followed by the powdered spices. After 10-12 minutes of simmering with a lid on, adjust salt as needed. The beans are not whole and intact as they are canned. As it simmers, the stew becomes so very thick and mushy. That's it

Garnish with chopped parsley or coriander if desired. Serve hot alongside rotis or chapatis. Enjoy!

I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. . Hi everyone!!! After yesterday’s Clean Monday or Ash Monday and a day of fasting, I am back with another Chicken recipe. 🙂 Fasting usually last for about 40 some odds days, which is way to long of time at least for me that is, so what I usually do is fast the last week before Easter. I think most people do that know, busy schedule and fasting a bit difficult. If your in the mood to eat something different give this recipe a try, you just might like it. 🙂My husband is a fan of Green beans, me not so much, but before I say NO to something I like to try it out first, I have actually tried to eat them a few times in the past, but it was a no go. I gave it one more try again today just in case my tastebuds have changed aaaand NO they have not..:), so I can officially say I am not a fan of Green Beans.Since, I do love Chicken this recipe has the combination of both worlds, and the taste is just superb (Chicken of course is). 🙂 With the addition of fresh tomatoes and herbs simmering together just makes you want to eat it all at once. Adding a side dish of Feta cheese, drizzled with Olive Oil, topped with fresh Oregano, dipping that fresh slice of bread into the sauce AWWW!! what more can I say. 🙂 Foodzesty
