★Lazy Yakitori★ No Skewers! Chicken Thighs and Scallions

Since we end up taking the chicken off the skewers anyway, why not just skip them from the start? That’s how this recipe came to be!

My family says, “It feels more authentic with skewers,” but honestly, this way is so much easier for the cook! The easier it is, the more often it shows up on our dinner table—so I hope they don’t mind. Sometimes I’ll make it the traditional way with skewers, though!
Cooking Instructions

In a bowl, mix together all the ingredients for the yakitori sauce and set aside.

Cut the chicken thighs into bite-sized pieces and place in a bowl. Add 1 tablespoon sake, 1 teaspoon sugar, and 1/4 teaspoon salt. Massage into the chicken and let sit for about 10 minutes.

Cut the scallions into 1 to 1 1/4 inch (2–3 cm) pieces.

Heat a frying pan and add a little vegetable oil. Add the marinated chicken and scallions, cover with a lid, and cook for a few minutes.

Once the chicken and scallions are nicely browned, flip them over and cook uncovered.

Wipe away any excess oil and liquid from the pan with a paper towel.

Stir the yakitori sauce again, then pour it into the pan. Mix everything together with a spatula until the sauce thickens, then turn off the heat.
