Mathri also called as mathiya or mathari is a popular North Indian snack of savory, salty, flaky and crispy crackers made with all-purpose flour, spices and seasonings. They are usually eaten as a tea time snack with either pickle or chai.
Cooking Instructions

Take a Paratha and sieve all flour, add ghee and salt, rub them properly and make a semi soft dough. Keep it aside for 10-15 minutes rest.

Now put a kadai on the gas adding sufficient oil for deep fry. Till then Knead the dough and cut lemon size balls. Roll the puri shown in the picture and give an impression using folk.

When all the puri are ready, start frying in the oil on low to medium flame. Keep on flipping and fry with patience to make it crispy.

Fry all the batches the same way and remove them in a Paratha to cool down. Now you can store it in an air tight container and enjoy it with chai or achar.
