I love this beautiful coloured rasam because of its distinct flavours of garlic & mint which makes it different from the usual beetroot recipes.
Beetroot is as healthy as its bright red colour , it helps in decreasing obesity, risk of cancer, diabetes & heart diseases. It is rich in calcium, vitamins, fibre & potassium .
The red colour in beets come from compounds called betelaines which helps in producing immune cells & body enzymes that help fight cancer development .
Though the exact cause of breast cancer is not known, Researchers have found the things that increase the risk of breast cancer. These include hormones , lifestyle choices & environmental changes. Breast cancer survival rates have been increasing & the number of people dying have been gradually going down . Much of this is to the widespread support for breast Cancer awareness & research.
Things you can do to lower the risk of Breast cancer.
1)Ask about breast cancer screening 2) Become familiar with your breast through self - breast exam .
3) Exercise most of the days of the week.
4) Drink alcohol in moderation.
5) Maintaining the healthy lifestyle.
6) Eat the correct diet.
Here is 1 such recipe to suit the Indian taste buds & at the same time encourage people to eat more & more beets . This recipe brings out best of both the worlds, the spicy rasam & earthy beet.

Cooking Instructions

Beetroot puree : Wash & peel the beetroot roughly & chop them. Cook the beetroot in a little water for 10 minutes.

Blend the beetroot with 2 tbsp of coconut to smooth puree.

Add little water,if only needed. I had not added any water as my beetroots were very juicy. Strain the mixture.

Beetroot Rasam : Heat oil in a pan. Add mustard seeds & cumin seeds, let them splutter. Add urad dal & asafoetida.

Add garlic paste & curry leaves & saute till garlic turns light brown in colour.

Add onions & slit green chillies. Saute till translucent. Add 1 cup of tamrind extract & turmeric powder.Mix well.

Boil for 5 minutes till the raw smell of tamrind goes away.

Add beetroot puree, salt & water to adjust the consistency of the rasam.

Add mint leaves & red chilli powder. Boil for 5 minutes.

Finally add chopped coriander & check the seasoning.

Serve Beetroot Rasam with steamed rice.
