Fresh Tuver And Brinjal Subji

Fresh Tuvar Sabji is a dish made of green pigeon peas. Since green pigeon peas are primarily available in winter, this automatically creates a winter dish. It is an everyday recipe in Gujarat.

This time I added Ringan with fresh tuver/pigeon peas..
Cooking Instructions

Peel the fresh tuver.
Cut the ringan in dice, keep them in the bowl of water.
Crush the tomato,onion, chilli, garlic and ginger.
Add salt Chilli, turmeric and coriander powder in it and mix well with little water.
Keep aside. - 2
Take oil in a pressure cooker.
Add mustard seeds Carom seeds, cumin seeds and Asafoetida.
Let it crackle well.
Then add tomato onion mixture and saute well till oil release. - 3
Now add fresh tuver and ringan.
Mix with the tomato mixture.
After that add water
When water starts boiling, close the lid and blow 3-4 whistles.
Switch off the gas. - 4
After releasing an air,
Open the cooker.
Transfer the subji in a glass bowl.
Sprinkle fresh coriander and serve immediately.
Enjoy yummy subji with roti and rice..
