Paneer and vegetable Upma

This is actually a recipe to make a roastie/dongeru. But something went wrong in the process and hence I ended up making the upma. It still tasted delicious.

Cooking Instructions

Combine semolina, curd and water in a bowl. Allow it to rest at least for 5 min.

Heat up oil in a pan. Crackle mustard and cumin. Add the onions and saute till they are translucent. Add ginger garlic paste and green chillies. Saute until the onions look golden brown. Add the veggies and the spices. Combine everything well.

Grate paneer into it. Add coriendar leaves. Mix well and add the semolina batter. Combine everything well. Cover cook on low heat for 3-4 min. Combine and Cook for another minute without the lid. The upma is ready!

If making roastie, add the veggies and paneer masala in the batter. Add eno and combine well. Heat up oil in a nonstick pan. Add the batter. Cover and cook for 3 min or until it gets firm. Flip and cook for another 3-4 min on the other side.
