Bitter leaf salad with charred dates and vinaigrette

They pair perfectly with some bitter leaves (which are in season right now!) and the tang and nuttiness of pecorino romano!

In a pan over medium heat, add some olive oil and the pitted dates.

With a flat object (eg the bottom of a glass) smash the dates in the pan and fry until blackened and charred. Set aside to cool for about 10 minutes.

While the dates are cooling: Make the vinaigrette.

Toast the walnuts in the air fryer/oven.

Toss the washed leaves with the vinaigrette and put it on a plate. Then top with the charred dates, shaved pecorino, and walnuts.
