Mava Gujiya

Gujiya is a classic North Indian sweet of crisp, flaky pastry filled with khoya (milk solids) and nuts stuffing. Today I made mava (khoya) out of milk powder.
Here, in Gujarat also we cook the same but known as Ghughra. It's the main recipe during Holi and Diwali and is cooked in every house.
Mava Gujiya

Cooking Instructions

Firstly prepare it's stuffing. In a kadai add, ghee and rave and roast on low flame till golden brown. Keep it aside.

Now here I have taken homemade milk powder mava and refrigerated so let it come to room temperature. Now in the same kadai roast it also till it becomes soft. Keep it aside to cool down. (see recipe)

Also fry chopped dry fruits and add in the mixture. After that in a mixing bowl add rava, mava, chopped dry fruits, powder sugar, cardamom powder and mix well.

Now make a dough for gujiya, adding ghee and required water make a soft dough and give 10 minutes rest.

Now knead the dough and cut small portion and roll out the puri. Put 1 or 1.5 tsp stuffing and seal it applying water on edges. Make Ghughra Design. You can also make designs on ghughra using a fork also.Repeat the process for the rest of Gujiyas.

Heat ghee for Frying ghuhghra. Once the ghee is hot reduce the flame to low and Fry 4-5 ghughra at a time.Fry Ghughra till it becomes light golden colour. One batch takes around 5-7 min for frying. Once done take it out on a paper napkin.

Allow Ghughra to cool down completely and then put it in an air-tight container. Serve the guests on the Holi festival and Enjoy!!!

It is made of puff pastry / croissant and is almost similar to bread pudding, but without any eggs.
