Dijon Potato, Cabbage and Bacon Skillet

Dijon Potato, Cabbage and Bacon Skillet
Feeds two as a brunch or supper dish, or one hungry pilgrim for their main evening meal. The Dijon mustard just marries together all the parts of this rustic dinner...sweetness from the onion, bitter(ish) Savoy cabbage, salty bacon and earthy potatoes.
Cooking Instructions

Heat 1 tbsp of olive oil in a cast iron skillet.

Fry the onion and bacon until both are browning up.

Add the chopped potatoes and stir. Some might get stuck on the bottom if the pan, but you can scrape that off and it will add more flavour to the dish. You may, if needed, add the other tbspn of olive oil if it's sticking really badly.

Add the.cabbage and stir.it all until the cabbage is softened (about 3-5 minutes)

Season well with salt and black pepper

Stir in the Dijon mustard, heat through a little while and serve.
