Ingredients

  1. 1onion, peeled and chopped
  2. 2 tbspolive oil
  3. 3 cuppart-cooked or cooked small waxy potatoes (yukon gold, pink fir, charlotte, for example)
  4. 1/4small Savoy cabbage, core and any thick veins removed and leaves chopped
  5. 3 slicebacon, cooked or uncooked, snipped into pieces
  6. 1 tbspDijon mustard

Cooking Instructions

    Heat 1 tbsp of olive oil in a cast iron skillet.

    Fry the onion and bacon until both are browning up.

    Add the chopped potatoes and stir. Some might get stuck on the bottom if the pan, but you can scrape that off and it will add more flavour to the dish. You may, if needed, add the other tbspn of olive oil if it's sticking really badly.

    Add the.cabbage and stir.it all until the cabbage is softened (about 3-5 minutes)

    Season well with salt and black pepper

  6. 6

    Stir in the Dijon mustard, heat through a little while and serve.
