But here I present a raw Salad recipe using both black and green kalamata Olives, Garlic and Sumac- a baharat used mostly in the Arab countries. Baharat is an Arabic word that refers to spice.

Ingredients

  1. 1 cupGreen olives
  2. 1 cupBlack olives
  3. 1 cupCapsicum green cut into thick strips
  4. 1/2 cupGarlic cloves
  5. 1 tspSalt
  6. 2 tbspSumac powder
  7. as requiredFew Lemon wedges (optional)
  8. 2-3 tbspOlive oil

Cooking Instructions

    Gather all the ingredients in a bowl and mix them all well.

    Drizzle olive oil dressing on top.

  3. 3

    Toss it well and keep it refrigerated for the flavors to infuse.

    Make it way in advance which will help the flavors to seep through perfectly well.

    Serve it chilled right from the refrigerator to the plate.

    Salt can be adjusted accordingly.

    No green chilli or red chilli is added because garlic gives that punch to it.

    Capsicum also adds to the pungent flavour similar to that of chillies.
