Ingredients

  1. 1 bunchChopped Malabar Spinach
  2. 1 cupCurds
  3. Green Chillies as required
  4. 1 tspVegetable Oil
  5. 10Curry Leaves (small)
  6. For Seasoning Fenugreek Seeds Mustard seeds Cumin seeds
  7. 1 teaspoonSalt

Cooking Instructions

    Heat vegetable oil in a pan.

    Add mustard seeds, cumin seeds and fenugreek seeds. Fry till crackling.

    Now add the chopped greens, green chilli and salt. Cover it with a lid and cook over low flame for 2 minutes.

    Take it into a bowl. Let it come to room temperature.

  5. 5

    Now take a cup of curds and stir it well. Add this to the cooked greens. Mix well.

  6. 6

    Garnish this with curry leaves and serve it with rice or chapati.

  7. 7

    Note that the colour of the greens doesn't change on cooking. I also used the tender stems(chopped) of the greens. You can use it as per your taste.
