I don't need much meat, but if there's too little it looks like a garnish. Cook with onion, and a fair amount of UDON!
作り方

Gather your ingredients.

In a small pot, add all ingredients except beef.

Heat to medium heat and cook until onion gets tender.

Add beef and stir to evenly cook it.

Set aside.

In a medium sauce pan, combine all broth ingredients.

Bring it to a boil over medium heat, then lower the heat.

Cook your udon according to your package instructions.

Drain, put into a bowl, pour the broth over the udon.

Place beef on top of the noodles, pour rest of the broth.

Add scallion over the beef and serve!

NOTE: Since we're going to add left over broth with beef→

make sure you don't over season the soup with salt.

If you can get thinly sliced "wagyu" beef from the Asian market, it adds up extra flavor into your broth!
