作り方
- 1
My Boston butt weighs 3.30 lb this time.
- 2
Trim some fat from the pork.
- 3
Cut the pork into 4 chunks.
- 4
Combine all the dry rub seasoning in a bowl.
- 5
Rub thoroughly over all sides of the meat.
- 6
Wrap the meat in a plastic wrap.
- 7
Put in an airtight bag and refrigerate over night.
- 8
Oil in a large Dutch oven over medium high heat. Place meat
- 9
Sear on all sides until nicely browned. Remove the meat.
- 10
Heat to medium, add garlic/shallots and cook until fragrant.
- 11
Add water and apple cider vinegar.
- 12
Scrape any browned bits from the bottom of the Dutch oven.
- 13
Place the meat back into the Dutch oven. Add liquid smoke.
- 14
Bring it to a simmer and adjust the heat to gently simmer it
- 15
Cover and cook for 3 hours or until pork is easily shredded
- 16
After 3 hours of cooking...
- 17
Turn off the heat, transfer the pork onto the plate.
- 18
Use two forks to shred the meat.
- 19
Transfer cooking liquid, skim most of the fat, and discard.
- 20
Add the cooking liquid to the Dutch oven.
- 21
Bring to a boil and cook until liquid is reduced by half.
- 22
Remove from heat, put back the shredded pork.
- 23
Taste, season with salt and vinegar as needed.
- 24
Serve on buns, and add your favorite BBQ or hot sauce!
- 25
Add coleslaw with mild cheddar and Kansas city BBQ sauce!
コツ・ポイント
Add liquid smoke into the cooking liquid to feel like it comes from a BBQ joint!
