Gather all the ingredients.

Oil in a large Dutch oven (3 1/2 qt) over medium heat.

Add onions, celery, and pepper. Cook for 15 minutes.

Stir in garlic and cook until fragrant.

Add tomato/water/bouillon/bay leaves/thyme/paprika/cayenne.

Bring to a simmer and cover.

Cook over low heat for 20 minutes, stirring occasionally.

Add okra and cook for 15 mins to thicken up the gumbo.

Stir in shrimp and cook until heated through.

Season with salt, pepper, and tabasco.

Serve over rice.
