Sunday is usually a lazy day at my house. So we cook with whatever is available.
Cooking Instructions

In salty water prepare the bananas and set aside. Peel the potatoes and put in a different bowl in water.

Prepare all the other vegetables.

On medium heat, cook the onions till a bit transparent then add the garlic/ginger paste and cook till golden. Add the potatoes and stir till they start to cook on the edges, add the bananas and continue to stir for 2-5mins.

Add all other ingredients and cover till tomatoes are soft. Stir as you add water slowly until all combined. Let it sit on the fire on low heat for 30mins or till the potatoes are cooked through.

Add dania and switch off the heat. Let it sit for 5 mins before serving.

Easy veggie soup
Girlfriend wasn't feeling great so she requested soup. This is what I made her because this is what we had in the house. The soup is vegetarian but not vegan because I thickened it with a butter roux but you can use vegan butter, a corn starch slurry, arrowroot, etc., if you prefer.

Meatball Stew
Sunday is my day to try new recipes so we tried this today. -in progress will update-This came out so tasty perfect for eating as a stew. We decide to make meatball subs so added a few spoonfuls of sauce and mixed that into what I was putting on the roll to make slightly thicker.Okay so for lunch I ate this as the actual stew it was so tasty and then to finish off I cooked up some pasta and had the stew over pasta.
