Cassava flour cupcakes

Ingredients

12 cupcakes
  1. 1 3/4 cupcassava flour
  2. 1/4 tspvanilla essence
  3. 1/2baking powder
  4. 2eggs
  5. 1 cupmilk
  6. 1/2 cupsugar
  7. 1/4 tspsalt
  8. 1/3 cupoats
  9. 1/4 cupmargarine
  10. 2 tspoil

Cooking Instructions

  1. 1

    Mix the dry ingredients and set aside except for the oats

  2. 2

    Whisk the eggs, sugar, margarine together

  3. 3

    Add the dry ingredients to the egg mixture, alternating with the milk, till you get the desired consistency

  4. 4

    Add the oats and oil to the batter till well incorporated

  5. 5

    Preheat oven at 180° for 10 mins then bake at 180° for 35minutes or till a toothpick inserted comes out clean,
