Bitterballs (Bitterballen/Dutch Meatballs) Bitterballs (Bitterballen/Dutch Meatballs)
This is absolutely a favourite everywhere. What makes it so great, is that you can chop and change the ingredients to whatever you want. The original recipe only has meat, salt, pepper, parsley and nutmeg in it, but I love it with onions and mushrooms. It is fantastic served hot with wedges and creamy garlic sauce! Try it without the beef stock as well using only milk and adding a little chilli for some kick. Divine! Adele Arpin -

Light Eggplant Fatteh Light Eggplant Fatteh
This Eggplant Fatteh is a healthier and lighter version of the classic middle eastern Fatteh. Eggplant Fatteh is basically a layered eggplant and yoghurt salad. Layers of crispy pita bread, eggplant and tomato sauce, ground beef, and yoghurt sauce, topped with pine nuts, parsley, and pomegranate seeds. For a healthier Fatteh , Instead of deep frying the eggplant cubes and the pita bread squares, I cooked the eggplants with the tomato sauce on the stove and toasted the bread in the oven. palibites
