These potstoes are crispy on top with seasoned moist centers accented with onions , cheese and bacon for a great side d I sh.

Ingredients

4 servings
  1. 4medium red potatoes
  2. 1small red onion
  3. 3 tablespoonsbutter, melted
  4. 3 tablespoonsolive oil, I used chili infused
  5. 1 teaspoonsriracha seasoning
  6. 1/2: teaspoon garlic herb.pepper
  7. salt and pepper to taste take
  8. 2 tablespoonsfresh grated romano cheese
  9. 2 slicesbacon, cooked crisp

Cooking Instructions

    Preheat the oven to 375

  2. 2

    Combine butter and oil in a bow

  3. 3

    Brush a baking dish big enough to hold potato slices upright rightly with the mixture

  4. 4

    Thinly slice potatoes and onion

  5. 5

    To remaining butter and oil add all seasonings Except romano cheese and bacon, transfer to a large bowl

  6. 6

    Add potatoe slices and onions and coat with mixture

  7. 7

    Arrange potatos and onions standing very snug together

  8. 8

    Bake for 1 hour then top with romano cheese and bake about 25 to 30 more minutes, potatos should be crisp with tender centers. Sprinkle with crumbled crispy bacon. Serve hot.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
