Chips with pork
This is a self motivated recipe made with love.
Cooking Instructions

Put the pork to boil as you peel your potatoes and cut them into wedges

Marinate the wedges with black pepper, paprika and salt and leave for about 5 minutes.

Heat the cooking oil and fry the wedges until they are golden brown and crispy.

Ensure the pork is well boiled then fry it, do not add any oil as it removes its own oil. Fry until it becomes crispy then add the onions and garlic and stir until the onions are cooked. Then add the tomatoes, followed by the Royco and tomato paste.

Cover the pork and allow it to simmer for about 5 mins.

Serve your food.

One of my sons is poorly this week so I'm concentrating on cooking lots of comfort food - and who doesn't find hot crispy chips with salt, vinagre and heaps of tomato sauce comforting??!! I don't like frying chips in tons of oil, but they taste just as good cooked like this in the oven and are much healthier too.
