I wanted to make cute Hinamatsuri (Girl's Festival) colored Japanese sweets.

The photo doesn't do justice to the actual hue of the paste, unfortunately. Adjust the amount of matcha to taste. 1/2 teaspoon is too little, and 1 felt like too much, so I went for somewhere in between.
If you have some, you can add a little matcha tea flavoring or liqueur to add a bit more flavor. Recipe by Makunouchi

Ingredients

  1. 25 gramsPowdered shiro-an
  2. 40 gramsSugar
  3. 3/4 tspMatcha
  4. 100 mlWater
  5. 1 pinchSalt

Cooking Instructions

    Put all the ingredients except for the tea in a small non-stick pan. (Add the matcha by sifting with a tea strainer.) Mix briskly and leave for a few minutes.

    Set the heat to medium, and simmer while mixing with a wooden spatula. Cook the mixture until it forms a paste that's the consistency you want. Turn the heat off and add salt to finish.

  3. 3

    Use this paste to make these Japanese confectionary. For Girl's Day, serve filled with sakura blossom paste.
