I love trying new vegetable combos, especially this bounteous time of year. This recipe serves 2-4 depending on serving size.
Cooking Instructions

Prep vegetables
- 2
Over a low fire, soften onion & garlic in olive oil until it is transparent
- 3
Stir in corn kernels & squash, turning fire up to medium low
- 4
Add stock & 1 pinch salt
- 5
Cover and cook until squash is tender, about 10 minutes
- 6
Add sumac & taste for salt
- 7
Add butter & stir
- 8
Turn off fire, cover & let rest for a few minutes
- 9
Sprinkle each serving with fresh herb
- 10
Enjoy!
