You can easily double this recipe, as I did tonight, to make servings for two people.

Ingredients

1-2 people
  1. 1chayote per serving, peeled and flesh cut into 1 cm cubes
  2. 1/2 teaspoonmild Indian chili powder per serving
  3. 1/4 teaspoonturmeric powder per serving
  4. 1/2 teaspooncumin powder per serving
  5. pinchsalt, or more, to taste, if you're not on a salt restricted diet
  6. 1 tablespoonoil or ghee
  7. 1/4onion or about 1 medium-sized shallot per serving
  8. 1garlic clove, or 1/4 teaspoon of granulated garlic powder, per choko
  9. 1/2 canbeans per serving, drained - kidney beans, pinto beans, and black beans all work well in this recipe and you can use a bean mix!
  10. 1/4 cupfrozen corn per serving
  11. 1/2tomato per serving, or use a whole tomato per serving if you're not on a potassium restricted diet
  12. 1/2capsicum per serving, any colour
  13. several handfuls of corn chips to cover a plate
  14. sprinkle of cheddar cheese for each plate (optional) - I used a lactose-free variety
  15. chopped red onion and coriander, for garnish (optional)
  16. hot sauce, to taste (optional)

Cooking Instructions

    Cut the chayote in half and remove the seed. Peel and then slice into cubes.

    Peel and chop your onion or shallot. Chop additional onion and move this to the side if you plan on using it as a garnish.

    Drain your can of beans and chop your tomato and capsicum, then place these to the side.

  4. 4

    Arrange the corn chips on a plate and sprinkle with cheese, if desired. You can melt the cheese in the microwave, if you like.

    Add oil or ghee to a large frying pan. Add the chayote and onion or shallot along with the spices and a pinch of salt. Fry over high heat until the onion is soft - about 2-3 minutes.

    Reduce the heat to medium-high. Add the beans, corn, capsicum, and tomato and cook for another 5 minutes or so until your chayote is cooked through.

    Plate your nachos! Spoon the bean and vegetable mix over the top of the chips and add hot sauce, fresh onion, or fresh coriander leaves if you'd like.
