Daikon radish miso soup back home was always like this. This is my children's favorite miso soup now.

If you cut the carrot too fine, the pieces will break, so cut them on the thick side. It's good even if you cook it for a bit too long. For 4 servings. Recipe by Remongurasu.

Ingredients

4 servings
  1. 1/2Daikon radish
  2. 1Carrot
  3. 1000 mlWater
  4. 1Dashi stock granules (to taste)
  5. 1 dashJapanese leek (green onions)
  6. 1as much (to taste) Miso

Cooking Instructions

    Julienne the daikon radish. Don't worry if the pieces are a bit big.

  2. 2

    Put the daikon radish and dashi stock granules into water and heat.

  3. 3

    As the daikon radish cooks, julienne the carrot into short, rather thick matchsticks.

  4. 4

    Continue cooking until the daikon radish turns pretty soft...

  5. 5

    Add the carrot, and simmer until soft. Add miso to taste, and it's done.

  6. 6

    Enjoy piping hot!
