Cocoa, Orange & Peanut Cookies!!

I’m Spanish, but I’m from Valencia—the land of oranges 🍊!! That’s why you’ll see me using them a lot in sweet treats like cookies, cakes, syrups, etc.
These cookies remind me a lot of the flavor of chocolate “polvorón” (is a traditional Christmas sweet usually made with almonds and lard as a base). And honestly, I don’t know why, but these cookies have a similar taste! All I can say is that they’re absolutely delicious!

Cocoa, Orange & Peanut Cookies!!

Cooking Instructions

Mix the yolks and sugar.
In a bowl, combine the two egg yolks and the sugar. Mix well. - 2
Add dry ingredients and butter.
Weigh out the cocoa powder and add it along with a pinch of salt, flour, and the cold butter. Mix with the sugar-yolk mixture. - 3
Prepare the orange zest.
Wash the orange and grate the zest. - 4
Form the dough.
Now we’re going to mix all the ingredients by hand—it’s the best way, really! With the warmth of your hand, the butter will blend perfectly with the rest of the ingredients. Form a smooth, uniform dough. - 5
Add the nuts.
Once we have decided on the nuts we want to use, break them into small pieces and add them to the dough. Mix until they are evenly distributed! - 6
With both hands, shape the dough into a long roll, wrap it in plastic wrap, and place it in the freezer for 30 minutes. (You’ll notice it’s covered in brown sugar—that wasn’t a good idea, don’t do it! 🙈🤣 It melts and burns!)

Slice the cookies.
Once firm, cut the log into slices about ½ inch thick and place them on a parchment-lined baking sheet. - 8
Bake.
Preheat the oven to 350°F (180°C). Bake until the cookies are firm and slightly golden on top. - 9
Coat with sugar.
While still warm, roll the edges of the cookies in sugar for an extra touch. Let them cool on a wire rack. - 10
Enjoy!
