Vanilla-buttercream frosted cupcakes

I love being adventurous with cupcakes. I create different types of gift bouquets using cupcakes frosted with buttercream. This one is a Christmas Cupcake Bouquet that I also used fondant toppers that I gifted to one of my son's teachers. This recipe I learnt when I attended Lucia Wanjiku Mugo's baking class and I have used it since with afew adjustments.
Vanilla-buttercream frosted cupcakes

Cooking Instructions

Preheat oven. I set my oven at 160 degrees Celsius. Line up cupcake tin with cupcake holders.

In a bowl beat margarine until smooth. It should be creamy and light.

Add sugar to the margarine. Mix well till fully incorporated.

Now add the eggs and essence and mix well

The flour will need to have been sifted together with the baking powder in a separate bowl. Now add in the flour in three batches alternating with maziwa mala. Sometimes I can use plain milk or sour cream. Ensure to fold in the flour using a spatula and that the flour is fully mixed into the wet ingredients.

Now spoon the mixture into the cupcake holders to about 2/3 full and bake for 25 minutes.

Buttercream frosting: here mix all the ingredients together using a hand mixer for a good smooth mix. Do this for about 5 minutes.

Colour buttercream as desired. Use piping bags and assorted icing nozzle tips for decorations.
