I had leftover rice and not everyone was up for dinner. So something to go with the rice and eggs came to mind.
Cooking Instructions

Cut onions and tomatoes. In a separate bowl, beat the eggs.

In a pan, heat the oil and fry the onions until browned. Add the tomatoes and cook well.

Add the eggs and stir as you cook. Add Salt to taste.

Once almost done, add the leftover rice and stir fry. Once cooked serve and enjoy.

You can add other vegetables and spices as you like.
