I have always liked the lemon blueberry combo in foods. I like to zest my lemon and use in the pie fillings, it is optional but very good. I hope this will make your spring and summer a hit at the bbq or dinner. I hope you enjoy.

Ingredients

  1. Lemon Filling
  2. 1/2 cupbutter
  3. 1/2 cupfresh or bottled lemon juice
  4. 1 1/2 cupsgranulated sugar
  5. Pinchsalt
  6. 1 1/2 tablespooncornstarch
  7. 4large eggs, well beaten
  8. Strudel Topping
  9. 1 cupall purpose flour
  10. 1/3 cupgranulated sugar
  11. Pinchsalt
  12. 5 tablespoonbutter, melted and cooled
  13. 1 teaspoonvanilla extract
  14. Blueberry Layer
  15. 3 cupsfresh or frozen blueberries
  16. 1/3 cupgranulated sugar
  17. 1 1/2 TablespoonsCornstarch
  18. Pinchsalt
  19. 2 tablespoonslemon juice
  20. 9 inchdeep dish pie crust

Cooking Instructions

    Preheat oven to 425 degrees.

    Bake crust for 10 minutes. Place on rack to cool.

  3. 3

    Mix blueberries, cornstartch, salt, sugar and lemon juice. Heat until bubbly and thickens. Set aside.

    Turn oven to 375. While oven is reducing in temperature, melt the butter. Add lemon juice.

  5. 5

    Mix the flour, salt, sugar, cornstarch and add to the melted butter and lemon juice. Mix well.

    Add eggs and mix well.

    Pour into prepared crust and bake for 20 to 25 minutes. The filling should be jiggly in the center.

    Mix your cooled melted butter with flour, sugar and cornstarch. Mix until crumbly and sandy.

    Spoon blueberry mixture on top of lemon pie evenly.

    Sprinkle strudel topping over blueberries.

    Bake additional 20 minutes or until strudel topping is golden brown.

    Cool on wire rack completely before slicing.

    Servealone, with whipped topping or vanilla ice cream.

It kinda got over filled and looks like a hot mess but i will make another and use less topping and take better pic lol
