Ingredients

1.15 hrs
1 kg
  1. 400 gall-purpose flour
  2. 1full plate grated carrots
  3. 4eggs
  4. 1 cupsugar
  5. 1 cupcooking oil
  6. 1tspn vanilla essence
  7. 2tspn baking powder
  8. 2tspn baking soda
  9. 2.5tspn cinnamon powder
  10. 50 gcashew nuts
  11. 50 graisins

    Heat oven 160 degrees

  2. 2

    Oil and dust 2 baking tins

  3. 3

    Put together sugar, oil, eggs, vanilla essence and mix well with a wooden stick.

    Put together flour, baking powder, baking soda, cinnamon and sieve into the oil/egg mixture little by little as you fold in until all the flour is well folded in.

    Add grated carrots and fold into the batter.

    (Having soaked raisins and cashew nuts for at least 10 minutes before and the water drained off, dry them in little all-purpose flour to enable them separate into individual pieces) add them to the carrot batter and fold in well.

    Pour the batter into two baking tins for easy and wholly baking then bake for close to 60 minutes until a skewer inserted comes out clean.
