Ingredients

  1. 1onion chopped
  2. 2red bell peppers chopped
  3. 1 candiced tomatoes
  4. 4 clovesgarlic chopped
  5. 1 tbspcumin
  6. 1 tbsppaprika
  7. 1/2 tbspground oregano
  8. 2eggs
  9. Salt
  10. Pepper
  11. Sugar (optional)
  12. Cilantro
  13. Chicken bouillion cube (optional)
  14. Oil and butter

Cooking Instructions

    Saute onions and red bell pepper in oil and butter, add garlic after 2 mins.

    Add diced tomatoes. Simmer.

  3. 3

    Season with salt and pepper. Add cumin, paprika and oregano. Add sugar if it suits your taste. Add chicken cube if it suits your taste.

    Make two wells in the mixture, add egg to poach. Cover.

  5. 5

    Sprinkle with chopped cilantro before serving with toasted bread.
