Ingredients

  1. 380 gAll purpose flour
  2. 6medium carrots grated(fine or coarse)
  3. 3eggs
  4. 80 gplain yogurt
  5. 1 tspvanilla essence
  6. 250 gsugar
  7. 300 mlSunflower/vegetable oil
  8. 2 tspbaking powder
  9. 1 tspbaking soda
  10. 1 tspsalt
  11. 1 tspCinnamon powder
  12. 1huge handful raisins (optional)

Cooking Instructions

    Preheat Oven to 170 degrees as for me i preheat my charcoal oven 10min prior baking

    Peel,grate carrots, To the carrots add the eggs,yoghurt,vanilla,sugar and oil and mix together with a handmixer,or a whisk and koroga

  3. 3

    In another bowl,Sift flour,baking powder,bicarbonate soda,Cinnamon powder and salt together and mix together

  4. 4

    Add the flour mix to the carrot mixture in 3 parts and fold in well with a mwiko in each addition add the raisins and combine well pour into greased baking tins bake for 50mins to an hr depending on ur oven

    With chocolate buttercream, cream 100gm butter,with 200gm Icing sugar +55gm dark cocoa powder,1tsp vanilla essence adjust with few drops of milk, i decorated my cake with fresh strawberries
