Ingredients

  1. 150 gbakers mix(dried fruits
  2. 125 gmbutter/magerine
  3. 2 tspbaking powder
  4. 4large eggs
  5. 120 gBrown sugar
  6. 2 dropspineapple essence
  7. 280 gmflour
  8. Zest of one orange
  9. 60 mlmaziwa mala
  10. 1/2 tspnutmeg powder
  11. 1/2whole ginger grated (optional)

Cooking Instructions

    Soak your dried fruits in quencher juice, i soaked mine overnight; you can use any alcoholic brand like Rum or whiskey to soak, soaking is not limited you can soak for up to one year. Next assemble your ingredients then preheat your oven as for jiko oven preheat 10 minutes prior baking

    Cream brown sugar +magerine +pineapple essence +zest +grated ginger together this helps to infuse flavor more directly, add eggs one by one as you mix

    Sift flour +nutmeg powder +baking powder together then using a mwiko start folding in the dry ingredients to the wet ingredients, in bits fold flour mixture then mala till well incorporated

    Lastly add the fruits with the liquid and pour mixture into a greased baking tin, bake for 35-40 minutes

    Enjoy with a cup of coffee, cake yielded 1.5kgs,yummy😍
