Soaking fruits for a bit longer improves the taste😘
Cooking Instructions

Soak your dried fruits in quencher juice, i soaked mine overnight; you can use any alcoholic brand like Rum or whiskey to soak, soaking is not limited you can soak for up to one year. Next assemble your ingredients then preheat your oven as for jiko oven preheat 10 minutes prior baking

Cream brown sugar +magerine +pineapple essence +zest +grated ginger together this helps to infuse flavor more directly, add eggs one by one as you mix

Sift flour +nutmeg powder +baking powder together then using a mwiko start folding in the dry ingredients to the wet ingredients, in bits fold flour mixture then mala till well incorporated

Lastly add the fruits with the liquid and pour mixture into a greased baking tin, bake for 35-40 minutes

Enjoy with a cup of coffee, cake yielded 1.5kgs,yummy😍

I came across this recipe on the internet when I was looking for semolina cake recipe. In my first attempt I followed the recipe step by step, but unfortunately the cake turned out very dry. So, I made orange syrup and poured it on top, I thought the syrup would make the cake moist. The cake was nice and moist with orange syrup, but it had to be eaten as quick as possible, because it turned bad the next day.So, in this recipe I have made some adjustments where I reduced the amount of flour and sugar in it and added extra almond powder. #MyCookBook2020, I decided to revamp this recipe with a bit of extra oomph without going over the top with decor or extra icing. I still prefer my cakes to be simple. Because simplicity is always the ultimate sophistication, do you agree?I will be dividing this recipe into 2 parts: soaking of fruits and baking the cake. But it will be all in the same post. I will update the 2nd part after 10 days; that is how long I am gonna soak the fruits. You can do it in 7 days. You can of cos use any types of liqueur you desire, I decided to go for Cointreau for that extra fruity punch.To make life easier, I am using a dried fruits mix from Foodsterr.
