This started as my Mother's recipe. She just simply cooked them on the stove top. I tweaked what I wanted, and it's easy peasy. What used to take roughly 3 hours is now 1 hour!! No need to pre-soak the beans whatsoever.

Ingredients

  1. 4 SlicesSmoked Bacon Cubed
  2. 1\2 diced onion
  3. 1 TablespoonOlive Oil
  4. to Taste Salt
  5. to Taste Fresh Cracked Black Pepper
  6. 2 ClovesMinced Garlic
  7. 6 1/2 CupsWater
  8. 3Beef Bouillon Cubes
  9. 1 PoundPinto Beans Sorted and Rinsed
  10. Cook 60 Minutes High Pressure
  11. 1 CanFavorite Chili
  12. Quick Pressure Release

Cooking Instructions

    On medium high sauté mode, add bacon, olive oil, onion, salt and pepper. Cook until onions are translucent, and the bacon has rendered some fat. 7-10 minutes. Add Minced Garlic towards the end.

    Add water, bouillon cubes, and pinto beans. Cook under high pressure for 1 hour. Let it naturally release for 10 minutes, then do a quick pressure release. Enjoy!
