Kat vada is a traditional Maharashtrian recipe.This is Kolhapur special. Fried batata vada is served with hot and spicy gravy known as kat, or tarri.this combination tastes just awesome with pav.
Cooking Instructions

Heat oil in a pan. Add onion, garlic, ginger and saute onion till it translucent.

Now add coconut and mix well and fry it 2 minutes.

Turn of the flame and let the masala cool down.

Transfer the masala in a blender and make a fine paste.

Heat oil in a pan, add blended masala and mix well, fry the masala well for 3-4 minutes, add kanda lasun masala, turmeric, red chilli powder, salt and mix well, now add hot water and boil the kat on medium flame for 5 minutes.

For Batata Vada stuffing: -In blender add garlic, ginger, chillies, fennel seeds, cumin seeds, coriander seeds and blend it coarsely.

Heat oil in a pan, add hing, curry leaves, coarse paste, turmeric, mix well, turn off the flame. add salt, chopped coriander and mashed potatoes and mix well.

Stuffing is ready, now make a little big vada from this.

For besan batter: -Take besan into a bowl, add rice flour, salt, turmeric, soda, mix well and add a little water at a time.

The consistency of the batter should be a little thick.

For kat vada: -Heat oil in a pan, dip the vade in the batter and drop them in hot oil and fry till golden brown.

Batata vada is ready, serve some hot kat into serving dish, add vada in it, garnish Kat Vada with chopped onion, sev, lemon and coriander.
