Do you have some left over noodles?Well here is a little something I put together, my wife loved it so much, I'm going to make it again, with "new noodles" instead of left over.Since asparagus is on sale right now, seems like good timing.

I had spinach and leftover soup... Wanted to use both ingredients, and the result came out amazing!

You can do this with any buns or bread that is about to go bad or that you don’t want to freeze. 3 buns makes about 3/4 cup of breadcrumbs

Had pasta and meat sauce yesterday and of course the kids never seem to want leftovers, but I don’t like to throw foods either SO LEFTOVER CONVERSION and the kids loved it all over again 😄

Ideally I should call this recipe the "everything but the kitchen sink frittata". There are days when you stare at the contents of of your refrigerator while listen to the rumbling of your stomach. Some of these experiments turn into a disaster while some are surprisingly tasty. Thankfully this fell into the latter category.
