Parsnip & Carrot creamy soup

Cooking Instructions

Roast carrots and parsnips with garlic in oil with ground cumin

When veg is soft and aromatic take out the oven and allow to cool
- 3
Once cool add to blender with coconut milk and blend until smooth, if you need more liquid start slowly adding more stock. In total you will add all stock to blender.

Once all blended you can add to a pan to re heat, depending on how thick your mix is you may want to add more stock

When hot enough then serve and sprinkle a bit of chilli on for kick

Yes, that title is a mouthful, but that's the best description! I wanted an Indian inspired dish, and this is what came about. Paleo, vegan/vegetarian, gluten free, and oh so tasty! FYI Using honey will transition this dish from vegan to vegetarian, and depending on your paleo philosophy you may not consider it paleo at that point either. I liked it so much, that my mouth slapped me in the face. It was wondering why we never had it before that day. The soup is that good.I love carrots and ginger. Sadly, I can only find this soup at one restaurant. The owners are not so nice, so I set out to make up a recipe for this soup. I mixed up a few online recipes, added a few personal items and voila! I came up with this recipe.Accidentally, my wife and I found out that the soup can be eaten cold. It will be great during the summer.
