Ingredients

  1. 1 cupsoaked urad dal
  2. 3 cupsoaked rice
  3. 1/4 cupCarrots cubed
  4. 1/4 cupPotato cubed
  5. 1/4 cupcubed gourd
  6. 1/2 cupsliced onions
  7. 1/2 cupchopped tomatoes
  8. 1 tspmethi daana(fenugreek seeds)
  9. 1 tspsarso (mustard)seeds
  10. 1 tsprice uncooked
  11. to tasteSalt
  12. 3 tbspsambhar masala
  13. 1 tsphaldi/ Turmeric powder
  14. 1 tbspkasmiri chilli powder
  15. 1 tbspcoriander powder
  16. 1 tspchaat masala
  17. 1/4 cuptamarind juice
  18. 1/4 cupjaggery
  19. 1 tsphing/asafoetida
  20. 4-5red chilli dry
  21. 1/2 cuparhar dal cooked

Cooking Instructions

    Take mixer grinder add urad daal, rice some water and grind in a smooth paste. Keep the mixture covered in a warm place for overnight

    Then in the morNing :

    Take a wok heat oil add mustard seeds, dry red chilli. Rice, hing and saute for a minute

    Then add onion cook well

  5. 5

    Then add tomatoes and cook till smushy

  6. 6

    Then add all the spices and cook for a minute

  7. 7

    Then add all the veggies and 1/2 cup water cover and cook till the veggies are completely cooked

  8. 8

    Then add the lentil, jaggery and tamarind cook on high flame for 5 minutes

  9. 9

    Make idlis out of tge batter (steaming time for idli is 10 minutes)

  10. 10

    Serve hot with coconUt and coriander chutney
