Red oil Stew with Fresh Okro soup
Just want to go local today for the Children's day.
Cooking Instructions

Wash and blend tomatoes, onion, pepper, red bell pepper, yellow pepper and boil to reduce water.

Wash and season fish, and other protein, boil and fry.

Heat red oil and add onion, add the boiled tomatoes fry for five minutes.

Add stock and correct the seasoning and add all the fried protein then add your pumo.

Reduce heat to stew for some minutes.

Wash and cut Okro, pound locust bean and hot seed add to water and heat allow to boil for 3 minutes.

Then add your cut Okro allow for few minutes so that the Okro will retain it green nature.

Soup is ready. You can serve it with Amala, or any swallow of your choice.

I got the idea of making this soup after someone made a soup from a stew we had the night before whilst I was travelling.I'm using breast meat, but thigh meat is much juicier. If you want to make this recipe a bit healthier, then omit the flour. The vegetables in this soup have already been blended so if you want to give your stew a bit of texture, feel free to add any vegetables you find in your freezer. #Ashlab.Okro soup has been one of the most easiest and quickest soup to prepare.some argue that okro takes a lot of time and energy to make,but for me I used the blender method to blend my okro and ogbonno due to the fact that I don’t like the smell that comes from ogbonno,So blending it together with the okro removes the smell and also gives it a nice taste.It’s known as miyan kubewa in Hausa.I love everything about okro soup mixed with ogbonno,especially that part of draw,which makes it fun while eating. Blending your belly pepper,chilly pepper with the garlic,onions and cray fish gives the paste a nice aroma and also taste.Least I forget I used the processed okro because I couldn’t get the fresh okro here .You can cut spinach and add to your okro soup.Don’t forget to wash your hands before you start cooking and also wash all the veggies that needs to be washed.
