  • 8 cupsno salt vegetable broth, store bought or home made
    California Farm No Salt Vegetable Broth
  • 2 cupstomato broth for soup, store bought or home made
    California Farm Annual Tomato Harvest
  • 1 cupdried red kidney beans, soaked overnight in cup red wine + cup water, makes 2 cups of beans
  • 1 cupdried northern white beans, soaked overnight in cup white wine + cup water, makes 2 cups of beans
  • 1 cupdiced red onion
  • 1 cupdiced zuchini
  • 1leek cut in rings
  • 1 cupchopped napa cabbage
  • 1 cupfrozen peas
  • 1/2 cupdiced red sweet pepper
  • 1/2 cupdiced green jalapeno pepper
  • 1/2 cupchopped celery stalk
  • 1 cupcured parma ham, diced, or celeriac root, diced
    California Farm Parma Style Cured Ham
  • 6 cloveselephant garlic
  • 4 halfportions fettucini, store bought or home made from cup of flour and 2 eggs
    California Farm Fresh Egg Fettucini and Bowtie Pasta
  • 4 Tbschopped or dried parsley
  • 4 Tbsgrated parmesan cheese for garnish
  • 2 Tbsolive oil
  • Twig of rosemary
  • 4Bayleaves
  • Equipment: cast iron dutch oven with lid
  • Cost: ham $1, vegetables $1, broth $1, fettucini $1, wine $1, per person dinner $1.25

    Sautee garlic, onion, leek and chopped parma ham or celeriac root in olive oil till fragrant.

    Make half pound of fresh fettucini: make doughball by squeezing cup of flour and 2 eggs with your fingers, roll out on flour dusted surface to thickness of a penny, roll up like a pancake, slice about 24 thin strips with knife, hang or roll out to straighten, 5 minutes.

    Simmer the stew: Add 8 cups vegetable broth and all other ingredients except fettucini and parmesan cheese, boil till beans are soft, about 50 minutes. When soft, add fettucini, cook 10 more minutes. Garnish each plate of stew with grated parmesan cheese. Enjoy.

    To make fresh soup from this stew, dilute leftover stew with 1 cup of tomato broth, stir, add another cup of broth if you want thinner soup. Heat, do not boil. Sprinkle with parmesan cheese. Enjoy.
