Sometimes you just need pancakes and bacon with vanilla syrup. This is such an easy pancake batter. And the syrup is easy too. Super quick and easy not to mention extremely comforting.

Ingredients

  1. Pancakes:
  2. 2 cupsself rising flour
  3. 1/3 cupsugar
  4. 1 cupmilk give or take
  5. 1egg beaten
  6. Syrup:
  7. 2 cupssugar
  8. 1 cupwater
  9. Vanilla

Cooking Instructions

    Preheat your oven to 350 for the bacon. I cook 1 lb on 350 for about 20-30 minutes. I like it crispy.

    In a small saucepan, combine sugar water and vanilla. On medium heat, cook the mixture just until the sugar is completely dissolved. Let sit until time to eat.

    Next, mix all your pancake batter ingredients and blend well. Let sit until your bacon is about 10 minutes from done.

    On medium heat, add a little oil or butter to a skillet. I like olive oil. With a 1/2 cup measuring cup sprayed inside and out with cooking spray, put batter into hot oil and let it cook til bubbles form on top and the edges look dry. Flip and cook through.

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
