Ingredients

  1. 6Bread Slices
  2. 1whole Chicken Breast (cubed)
  3. Scotch bonnet Pepper (as desired)
  4. 1small onion bulb
  5. 1 TablespoonGinger and garlic paste
  6. 2 TablespoonsVegetable oil
  7. 1Seasoning cube
  8. to tasteSalt
  9. Butter
  10. 2 TablespoonsMayonnaise
  11. 2 TablespoonsKetchup
  12. 1/2 TeaspoonBlack pepper
  13. 1/2 TeaspoonParsley flakes
  14. lettuce (optional)
  15. Tomatoes Slices (optional)

Cooking Instructions

    To make the sandwich filling. Place a pan on medium heat, add vegetable oil. Saute onion for about 2 minutes. Add chicken breast. Saute for a minute.

    Add ginger and garlic paste, scotch bonnet pepper, seasoning.

    Add black pepper. Keep stir frying until chicken is perfectly cooked. Finally add parsley, stir and take off the heat to cool completely.

    In a clean bowl, mix mayonnaise & ketchup. Coat the stir fried chicken in the mayo and ketchup mix and set aside. Assemble the sandwich by spreading the chicken mix on a bread slice.

    Cover with another bread slice. Repeat the same process for the remaining slices. You can add any vegetable of choice to make it more colourful and healthy.

    Butter the top of each sandwich. Place a pan or grill on medium flame and place the buttered top of each sandwich at the bottom of the pan. While the bottom part is grilling, butter the top and flip after about 3 minute to grill the other side.

    Slice in triangles and enjoy with your favourite beverage or drink.
