Ingredients

45 minutes
8 servings
  1. 3-4Fajita sized tortillas
  2. 3 cupsMexican style shredded cheese
  3. 1 (10 oz)can diced tomatoes & green chiles
  4. 1 (24 oz)can red enchilada sauce
  5. 1 lbground meat of your choice

Cooking Instructions

    Preheat oven to 350°.

    Brown meat in skillet, drain if necessary. Season to taste (I use minced onion, salt and pepper).

    In mixing bowl, combine tomatoes, chiles, 3/4 of enchilada sauce, and meat.

    Cover bottom of 9-inch pie dish with enchilada sauce, place tortilla on top.

  5. 5

    Spoon sauce and meat mixture over tortilla, then sprinkle shredded cheese on top.

    Repeat layers until pie dish is nearly full.

  7. 7

    After your final layer, place one tortilla on top, then spread the rest of your enchilada sauce on it.

    Bake for 30 minutes. I sprinkle more cheese on for the last 10 minutes.

    Dinner is served!
