Apple Butter

I’m honestly late to the Apple Butter game. I didn’t know it existed until I ate it at a restaurant. I bought a jar to take home because I liked it so much. I decided to make my own rendition on this apple phenomenon using some unorthodox methods. This is an all day affair, so I recommend doing this on a day when you’re going to be staying home. The good news is, you don’t have to hover over the stove, it almost makes itself.

Wash, core and dice apples. Place in a large pot.

Add in everything but the root beer. Stir throughly to coat apples. Add in the root beer, but don’t stir it. Allow the seasonings to stay adhered to the apples. Cover. Turn stove on medium heat and bring to a simmer. Then reduce to low.

Keep an eye on the apples. It’ll take a while, but you can periodically take a look at them until they resemble this.

At that point, you’ll want to put them in the blender and purée them. Return to the pot on low heat and continue cooking uncovered. You’ll want the steam to escape to allow it to reduce and thicken. STIR OCCASIONALLY.

When it has reduced to the point where when you stir it, it takes a few seconds to cover the bottom of the pot, it’s done. It will almost seem like it wants to hold it’s shape. Remove, store in a jar, refrigerate when cooled. Can it if you’the like to.

Apple Butter is basically a super concentrated and spiced applesauce. It's smooth and creamy. You can eat it over bagels, English muffins, toast, pancakes, waffles, in oatmeal, in yogurt...whatever you can think up. It is so simple to make at home and tastes so much better than store bought. This recipe is for a small batch...a little over half of a pint size mason jar, which for us is the perfect amount to have on hand at a time without it going bad, but you can double or even triple the recipe if you'd like. I like to use gala apples for this, but you can use whatever variety you like.

We had a busy day and didn’t get to eat until 3pm. The oatmeal fueled me for the whole day. I decided to start incorporating baked oatmeal into my weekly food routine. This recipe uses quick oats and baking mix from Kodiak cakes. I subbed in apple butter for flavor and moisture in lieu of eggs. For the milk and sweetness I used a pint of vanilla halo top. This batch gave me 12 servings

A lot of people have never heard of apple butter before, so let me tell you it's super easy to make, a great way to use apples, and can be used in a million ways; on toast/English muffins, on pancakes/waffles, topping for ice cream, even a lower-sugar alternative for PB&Js.. or dip crackers in it for a snack!Sky's the limit!This can be made small or big batches, you can adjust the sugar to your taste.. so feel free to modify the recipe to your liking. I'm going to share the amounts of ingredients that I used for a small batch as pictured. I don't recommend freezing it but it'll last in the fridge up to a week.I recommend using a crock pot because this needs to cook for at least 8 hours, but it CAN be done on stovetop, just be careful to monitor it.Enjoy!

I love flavored whipped creams, they are a great frosting for cakes since they are not to sweet. This is flavored with apple and a touch of cinnamon so goes well with spice cake, bars and cookies. It's great on oatmeal, waffles and pancakes and a topping for fresh fruit or fruit pies!

This recipe comes straight from my Mother-in-law. From a young girl she collected so many recipes, and decided to make her own little cookbook. Of course, once I caught eye of this I went straight for it :). I am very lucky in regards to having this woman in my life, a very special lady. Anyway I have been watching her cook for many years and one recipe that I always found interesting is this Apple Preserve recipe.It is very simple to make but there is a twist to it. She always added 2 dashes of Rum.:). It tastes delicious.....that's if you like Rum, otherwise it taste delicious without the Rum.
