Ingredients

  1. 2 cupsSplit Moong Dal
  2. 1 1/2 cupChana Dal
  3. 1 1/2 inchginger
  4. 4-5garlic cloves
  5. 2-3green chilli (optional)
  6. 1diced onion
  7. as per requirementSalt to taste
  8. as per tasteChat Masala
  9. 1/2 tspBlack Pepper Powder and Jeera Powder
  10. 1 tspwhole coriander seeds (dry roasted and powdered)
  11. 2 tbspBesan
  12. 1 cup(leftover rice or soaked poha)
  13. LeavesCoriander
  14. as requiredOil to fry
  15. tipYou can even add palak or methi in this to make it more tastier

Cooking Instructions

    Soak Moong Dal and Chana Dal seperately for 4 to 5 years
    remove 2 to 3 tbsp of chana dal and moong dal to add in the batter for crispiest vadas.
    Grind both the dal's together adding ginger, chilies, garlic
    Remove the batter in a mixing bowl
    Add soaked poha or rice and besan
    Add salt and a pinch of chat masala
    Add the remaning dals to it

    Add Black Pepper, Jeera and Coriander seeds powder to it
    Add coriander leaves
    Add diced Onion
    Mix everything nicely and keep it aside for 15 minutes

    Heat Oil in a Kadhai
    Once the oil is hot enough add 1 tsp of hot oil to the batter for soft and crunchy vadas.
    Make a ball size vada and deep fry
    To make the vadas more crunchy press them a little and deep fry them again

    Serve with your favourite chutney or kethcup.
