Ingredients

  1. 10Baby Irish potatoes
  2. 1/2 CupShredded Chicken
  3. 4Big eggs
  4. Vegetable oil
  5. 1Big carrot
  6. 1/2 TeaspoonThyme
  7. 1/4 TeaspoonCurry
  8. 1Medium Green Bell Pepper
  9. 1Medium Red Bell Pepper
  10. to tasteSeasoning and Salt
  11. 1Onion
  12. 1/4 CupGrated Habanero pepper (or as desired)
  13. 1/2 TablespoonGarlic paste

    Peel, wash & slice the potatoes, fry and strain on a paper towel. Slice the carrot and bell peppers in strips. Heat up about 2 tablespoons of oil in a pan, saute onion and garlic, add grated pepper and fry. Season with curry, thyme, seasoning and a pinch of salt. Add carrots and fry for another 2 minutes. Take off the heat and allow to cool.

    Break the eggs in a clean bowl, whisk and add the fried pepper and carrot mix. Check for salt and seasoning and whisk together.

    The next step is in two ways. Either grease a baking dish or a fry pan. Add the fried potatoes. Pour in the egg mix making sure every part is well coated. Distribute the shredded chicken and bell peppers on the top. Cover and place on low heat to set on a stove top or in a preheated oven. Garnish with spring onion. Slice and serve hot.
